Thanksgiving 2007

Waking up early and getting back to the routine was especially difficult today. We really enjoyed having a few days to catch our breath and relax before the final stretch of the semester. Poor Mandy was so overwhelmed before the break she had three tests in two days (all of which she aced) and at the same time was bogged down with a nasty sinus infection.

This year we decided to do Thanksgiving a little differently. My mom has been really bogged down as of late taking care of all the problems at the ranch due to the fires I thought it might be nice to give her a rest on this Thanksgiving. So we invited Mom, Dad and Little Sis up to Spanish Fork. Given how sick Mandy was I got promoted to Head Chef and had to prepare our Thanksgiving-Day Feast.

I made a brined Turkey – recipe from Emeril – the only way to do it in my opinion. The meat turns out so moist and good. The Turkey was accompanied by ham, sausage, deviled eggs, stuffed mushrooms, salad, rolls, twice baked potato casserole, green bean casserole, and cornbread stuffing. I also baked pumpkin, sugar-free pumpkin and pecan pies along with a pumpkin cheesecake. It was quite the feast! I really enjoyed putting the meal together. My retirement goal is to one day own and operate a restaurant somewhere. Something about cooking is just so relaxing and is a lot of fun.


Friday and Saturday we were busy hitting all the sales. The malls were quite busy but not too crowded given that all the students were out of town. To top the weekend off BYU beat Utah which was a thrilling cap to the Holiday!

Four weeks and we will be down in Dallas spending Christmas with the Richmonds.

Matt, your Thanksgiving Dinner looks like it belongs on the front page of a food magazine! One of Luke's retirement goals is to be on the food network, and I believe you are his best bet. I hope you are feeling better Mandy. I hope we get to see you guys over the holidays.
